Lohikeitto is a traditional Nordic fish soup and is popular in Finland. We got to try a few different versions during our trip, including one we made ourselves! It's easy to make and very delicious, warm, hearty, lightly creamy, and not too fishy.
Lohikeitto (Finnish Salmon Soup)
Rainbow trout is a great alternative to salmon - it's a milder tasting fish and tends to be more affordable.
Makes about 4 servings
Prep & cook time: 30 minutes
Ingredients:
1/4 cup butter
1 large leek, trimmed and sliced
4 cups fish stock (stock cubes work well)
1 pound potatoes, cubed
3 carrots, sliced
1 pound salmon or rainbow trout, cut into large pieces
1 cup heavy cream
Salt and pepper, to taste
Fresh dill
Instructions:
Melt the butter in a large saucepan over medium-high heat.
Add the leeks and cook, stirring continuously, for about 5 minutes.
Add the stock, potatoes, and carrots. Bring to a boil and cook for 15 minutes, until the potatoes and carrots are tender.
Add the fish and cream and bring to a simmer. Cook for about 5 minutes.
Season to taste with salt and pepper.
Divide into bowls and top with a generous amount of fresh dill.
